At The Nest, we believe happy employees create happy experiences. As a family-owned business, our goal has always been simple—serve great food, build a welcoming space, and create memories that last.
Our Story
The Nest is the heart of Ziemann Hospitality, founded by husband-and-wife team Devin and Kaytrin Ziemann. The two first met while working in a local restaurant and quickly discovered they shared a passion for hospitality and community.
In 2015, they opened their first venture, Crave Burgers and Frozen Yogurt, a fast-casual spot that quickly became a local favorite. Their success led them to expand with The Cuckoo’s Nest in 2017, known for bold flavors and creative dishes.
By late 2019, they had found the perfect location for their newest vision, The Nest in Schenectady. Just weeks before opening in March 2020, the pandemic paused their plans. With determination, they refocused on their Albany locations, and by 2021, brought The Nest to life—turning challenge into opportunity.
Their next chapter came with MILAS Restaurant & Bar, built inside a historic bank building. Opening in June 2024, MILAS feels like the final piece of their culinary puzzle - an exciting blend of heritage and modern dining.
Together, Devin and Kaytrin balance raising their two young children with running their growing group of restaurants. More than just business owners, they are neighbors, parents, and community partners who deeply value giving back and making every guest feel at home.
If 2020 taught us anything, it’s this—kindness matters. That belief is woven into everything they do.
Today, our restaurants - The Nest, and MILAS Restaurant & Bar, make up Ziemann Hospitality, a family of concepts shaped by hard work, creativity, and genuine care. You’ll often see our owners, Devin and Kaytrin at one of the restaurants, greeting guests, testing recipes, or simply making sure the atmosphere feels like home.
